Natural Ayu in Spring & Summer
Wild Duck in Autumn & Winter
The most famous ayu dish is undoubtedly the salt-grilled ayu.
One of the most well-known dishes featuring sweetfish "Ayu" is, without a doubt, the salt-grilled version.
The sweetfish in May and June are smaller in size, but their bones are soft,
allowing you to enjoy the whole fish from head to tail—an experience only available during this time of year.
By July and August, the fish have grown larger, their flesh becomes firmer, and they are at their peak flavor.
Being able to savor the changing flavors of sweetfish throughout the seasons is a unique offering at "Usho no Ie Sugiyama."
Additionally, one of the representative winter delicacies is duck.
Using a small, oval-shaped iron plate charcoal grill from the Imperial Household Agency's duck farm,
the duck is carefully cooked to bring out its rich umami, creating a flavor that can't be found elsewhere.
At Sugiyama, you can enjoy the most delicious wild male mallard, known as "Aokubi,"
either grilled on the Imperial Household Agency’s duck farm's iron plate or in the exquisite and healthy duck shabu.

Rare Natural Ayu of the Nagara River
The sweetfish caught by cormorants are considered the freshest, as they are instantly captured at their vital points with the cormorant's beak, preserving their freshness. Sweetfish marked by the beak are not sold in the market, making them rare and highly valued. Unlike the larger sweetfish commonly found in the market, the sweetfish from the Nagara River are "small and refined," representing the Nagara River brand. The sweetfish is also called "fragrant fish," and the fresh fish offers a unique aroma to enjoy.

Wild Duck Teppan-Grilled Dish – Imperial Hunting Ground Style
At Sugiyama, you can enjoy the most flavorful wild male mallard, known as Aokubi, grilled on the Imperial Household Agency’s duck farm's iron plate. The Okaribayaki traditional cooking method uses a small, oval-shaped iron plate handcrafted by a blacksmith and a compact charcoal grill. The duck meat and green onions are grilled over Binchotan charcoal with natural soy sauce, then served with shichimi spice and grated daikon for the perfect finish.

Gifu Prefecture is a treasure trove of medicinal herbs, where the northern and southern limits of Japan’s herb-growing regions overlap. The Ibuki Mountain Range, which runs north to south along the border of Gifu and Shiga Prefectures, is home to over 280 types of medicinal plants. Using these fresh, seasonal ingredients, we carefully prepare each dish to highlight the harmony of six flavors—sweet, spicy, bitter, sour, astringent, and salty—offering a truly flavorful experience.
